Butternut-Squash Hummus with baby carrots
This hummus-like spread (made without high-fiber chickpeas) has the same smooth and creamy texture as the traditional stuff with a touch of added sweetness from butternut squash. Paired with carrots or pita chips, it makes for a high-carb snack that will energize you for your run.

10 ounces frozen butternut squash cubes, thawed
1/3 cup tahini (sesame seed paste)
1 tablespoon orange zest
2 tablespoons extra-virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon paprika
2 cloves garlic
Salt and ground black pepper
Place the squash in a food processor and puree until completely smooth. Add the tahini, orange zest, oil, cumin, paprika, and garlic. Blend until well combined. Season to taste with salt and pepper.
