Lemon-Ginger Brew
Mix the basic recipe with muddled strawberries for a twist on pink lemonade or add rum to make it a cocktail.
From: bonappetit.com Makes about 3½ cups
8oz. ginger, peeled, chopped
½ cup fresh lemon juice
1/3 cup agave syrup (nectar) or pure maple syrup
Pulse ginger in a food processor to a coarse paste. Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30–40 minutes.
Strain into a large jar and mix in lemon juice and agave; add more lemon juice or agave, if desired. Let cool; cover and chill.
DO AHEAD: Brew can be made 2 weeks ahead. Keep chilled.
Extra Stormy Dark and Stormy
2oz. Lemon-Ginger Brew
2oz. dark rum
Club soda
Lime wedge and candied ginger (for serving)
Combine Lemon-Ginger Brew and rum in a highball glass filled with ice, then top off with club soda. Garnish with lime wedge and candied ginger.
Strawberry-Ginger Lemonade
3 strawberries, hulled
4oz. Lemon-Ginger Brew
Lemon slice (for serving)
Muddle strawberries in a highball glass. Add Lemon-Ginger Brew and stir well. Fill glass with ice and garnish with lemon slice.
