Steel Cut Oats with Maple Roasted Pears & Pomegranate

Makes two hearts or three smallish bowls of oats.
1/2 cup Plain Steel Cut Oats
1 cup filtered water
1/2 unsweetened almond milk + more for garnishing
pinch of sea salt
1 tablespoon chia seeds
1 tablespoon ground flax seed
1/2 cup pomegranate seeds
1/4 cup pumpkin seeds
maple syrup for drizzling {optional}
Bring the steel cut oats, water and milk to a light boil in a medium sauce pan. Reduce heat to low and cover. Cook for about 15 minutes. Then stir in the chia and flax seeds, cook for another 5 minutes or until the oats have reached a creamy consistency.
Divide the oats into two or three balls, then top with pomegranate + pumpkin seeds, splash of almond milk and a drizzle of maple syrup. Oh and the Maple Roasted Pears, don’t forget the pears!! See below for their super easy roasting instructions.
Maple Roasted Pears
This will make enough to top 6 bowls of oats, so feel free to double the recipe above.
10 – 12 seckel pears halved or any other type of pear quartered
1 tablespoon coconut oil
1/4 cup maple syrup
1/2 teaspoon vanilla extract
Preheat the oven to 375 + line a baking sheet with parchment paper.
In a mixing bowl whisk together the coconut oil, maple syrup + vanilla extra. Toss in the pears and evenly coat.
Lay the pears on theirs backside, roast for 5 minutes, flip and roast with the cut side down for 10 – 15 minutes or until soft and lightly browned.
These Maple Roasted Pears would also taste amazing as a simple dessert with a sprinkle of granola and a dollop of cream.
