Copacabana fruit salad

SERVES 4
1 tbsp sugar
Juice of 1/2 lime
3/4 tbsp Malibu or white rum
1/2 pineapple, peeled and sliced thinly
1/2 large mango. peeled, de-stoned and sliced
1/2 melon, peeled, deseeded and chopped
1 passion fruit, halved
Heat the sugar and lime juice with 1tbsp Malibu or white rum in a small pan over medium heat, stirring until the sugar has melted.
Boil for 1min. Strain into a serving jug, stir through the remaining alcohol and chill.
Layer the prepared fruit on a serving platter and serve with the syrup alongside. Allow people to pour syrup over their own portion
