Golden syrup microwave mug cake
Delicious served warm with a big dollop of vanilla ice cream...

5 tbsp self-raising flour
2 tbsp caster sugar
1 medium egg
3 tbsp milk
3 tbsp vegetable oil (or sunflower oil)
1 tbsp golden syrup (plus extra for serving)
vanilla ice cream (to serve)
Use the largest mug you can find to avoid making a mess (maybe even two mugs). Add the flour and sugar in the mug and mix. Add the egg, milk and oil - mix.
Add golden syrup to the top of the mixture – don’t stir it, it should sink through the sponge as it cooks
Centre your mug in the middle of the microwave and cook on high for 3 minutes (depending how powerful your microwave is) or until it has stopped rising and is firm to the touch
Allow to cool for a couple of minutes, then serve with a big dollop of vanilla ice cream
