Raisin Lard Cookies

2 cups all-purpose flour
1 tsp. ground allspice
1 tsp. ground cinnamon
1 tsp. ground nutmeg
¾ tsp. salt
2 cups rolled oats
1 cup sugar
1 cup boiling lard
½ cup warm water
1 tsp. baking soda
3 [large] eggs
half of a package of raisins
coarsely chopped walnuts
Sift flour, allspice, cinnamon, nutmeg, and salt into a bowl.
Combine rolled oats, sugar, lard, water, and baking soda in another bowl. Let sit a minute or so to let the lard cool a bit and the oats soften, then mix in eggs, followed by the dry ingredients.
Add raisins and walnuts. Add more flour if the dough isn’t stiff enough. A fourth of a cup should do it.
Bake at 375° for 10 minutes.
