Thai Salad Dressing
2 cloves garlic, peeled, roughly chopped
5cm/2in piece fresh root ginger, peeled, roughly chopped
1 long red chilli, roughly chopped
3 tbsp palm sugar (substitute soft brown sugar if unavailable)
3 tbsp roughly chopped fresh mint
3 tbsp roughly chopped fresh Thai basil
2 tbsp rice wine vinegar
2 tbsp lime juice
1 tbsp vegetable oil
2 heads Little Gem lettuce
Mash the garlic, ginger, red chilli, palm sugar, mint and coriander into a pestle and mortar and mash to a paste. Pour the mixture into a bowl, add the rice wine vinegar, lime juice and vinegar and mix until well combined.
