The Ultimate Burger

The Hairy Bikers, Si and Dave, share their recipe for the perfect burger, which includes a surprise ingredient - Tabasco sauce

500g minced rump steaks, (with a bit of fat)
4 shallots, finely chopped
1 tbsp chopped thyme
1 clove garlic, finely chopped
1 dash of tabasco
3 large pinches flaked sea salt
1 egg, beaten
To serve
tomato relishes
red onions, thinly sliced
white sesame bun
mayonnaise

1. Place all the ingredients in a bowl and mix well. Cover with cling film and leave to chill in the fridge for at least 30 minutes to firm up.

2. Shape the mixture into patties, brush with olive oil then fry or grill for 2-3 minutes on each side (for rare), or until cooked to your liking.

3. Slice the bun in half and spread each side with mayonnaise. Place the patty on the bun, top with the sliced onion and tomato relish, and serve.

Tip: Lean beef is not good for a BBQ as you need the fat to help cook and give extra flavour. Don't make the patties too thick or they'll struggle to cook through.

Hazels options: There are endless variations that can be made, for example, omit the Tabasco & try

  • 1 tbsp Thai curry paste (red, yellow or green) and 2 tbsp chopped fresh coriander for a Thai burger
  • sun dried tomato paste, or even add sun dried tomatoes, or just plain tomato sauce
  • use lamb mince and add mint sauce
  • 1 tbsp mustard and a splash of Worcestershire sauce
  • mould around a mini Baby Bel cheese for instant cheesburger
  • Make a knob of garlic butter and mould the burger around it for a Kiev burger
