Zimt Kuchen (Cinnamon Cake)

1 egg
250ml milk
3 tbsp flour
250g flour
2 1/2 tsp baking powder
2 apples, cored and sliced

For the Topping:
1 1/2 tbsp flour
1/2 tbsp cinnamon

Whisk the egg into the milk then add all the remaining ingredients for the cake together and whisk together to combine. Pour the batter into a greased and floured springform cake tin them mix the flour and cinnamon together. Scatter over the top of the cake and place in an oven pre-heated to 180°C. Bake for about 40 minutes, or until the cake is lightly golden and a skewer inserted into the centre emerges cleanly.

Allow to cool in the tin for 10 minutes then transfer to a wire rack to cool completely before serving.

4 Egg Yolks
80 g Sugar
200 g Quark
grated peel of a lemon and an orange
1 tsp Cinnamon
3 egg whites
1 pinch Salt
50 ml Milk
100 g Flour
2 Apples

Whisk the egg yolks with the sugar. Mix the quark with lemon peel and cinnamon. Whisk the egg whites with Salt until stiff. Pour the Milk and flour into the egg yolk-quark mix. Strir in egg whites.

Peel the apple peel if desired, core them. Cut apples into approximately 5 mm thick slices.

In a pan heat some oil & fry the apple slices. At to the center of each disc 1-2 tablespoons of dough type. (Dough then flows out through the hole). If the Küchle from the bottom are golden brown, carefully turn and add more butter to taste. Sprinkle cinnamon sugar on a baking tray. Bake in preheated oven at 180 degrees for 5 minutes.

Serve alone or with vanilla ice cream.
