SERVES 6

1 tbsp vegetable oil
1 chopped onion
1 chopped red pepper
1 tsp Bart Garlic in Sunflower Oil
250g minced beef
1 tbsp Bart Fajita Seasoning
60ml dry sherry
1 tbsp tomato puree
salt & pepper to season
25g raisins
25g slivered almonds
12 pimento stuffed olives

Heat the oil in a saucepan and add the onion and pepper. Cook until soft, then add the garlic and beef.Stir fry until the beef is browned. Stir in the fajita seasoning and cook for a further minute.

Add the sherry and tomato puree. Cook for 5 minutes before seasoning with salt and pepper. Then add in the raisins, almonds and halved olives.

Cook for a further 5 minutes. The mixture should be moist but not wet.

Serve in taco shells or tortilla wraps.

Homemade Fajita Seasoning

1 Tbsp chili powder (or to taste)
1 Tbsp salt
½ tsp cumin
Black pepper, to taste
1 tsp Oregano
½ tsp garlic powder
1 Tbsp paprika
¼ tsp red pepper flakes (optional)

Combine ingredients in an air-tight container.

Two heaped tablespoons is equivalent to one packet.
