Nutty Carrot Squares
Makes 12 squares
12oz/350g butter,
softened
12oz/350g light brown suger
6 eggs, size 3, beaten
12oz/350g self raising flour, sifted
1 tbsp baking powder
1 tspp mixed spice
4oz/125g walnuts, chopped
12oz/350g carrots, peeled and grated
For the topping:
12oz/350g cream cheese
30z/75g Icing sugar
2 tbsp mllk
12 walnut halves
Preheat oven to Mark 4 / 350°F / 18O°C
Put butter, sugar, eggs, flour, baking powder and mixed spice into a bowl and beat well until mixture is smooth.
Stir in chopped walnuts and grated carrots. Spoon into a greased and lined 12x8x1 inch / 30x20x2.5 cm baking tray.
Level top and bake for 50-60 min untll cake is cooked and a skewer inserted into the centre comes out clean. Remove from tin and allow to cool on a wire rack.
Beat together the cream cheese, icing sugar and milk until smooth. Spread over cake, than chill for 10min. Cut cake into 12 squares and press a walnut half into the centre of each.
