Daikon Salad

1 peeled moulis
1 avocado
1 roasted red pepper (peeled)
Mixed leaves
Enoki mushrooms
Chives

1. Cut daikon sheets on japanese cutter to a suitable size and keep in a damp cloth.

2. Wash and dry the mixed leaves and cut the pepper and avocado into strips. Lie a strip of daikon on the table, fill with the avocado, pepper, mixed leaves, chives and enoki.

3. Roll up so both ends are presentation ends and cut down the middle and serve with dresing.

For the dressing:
50g ginger
50g shallots
400g grape seed oil
300g sushi vinegar
300g daikon
20g soya sauce
5 cloves garlic
Sugar and lime juice to taste

1. Blend all the ingredients together and season with lime juice and sugar.
