Grandma’s Ginger Bake

2oz butter
2oz lard or vegetable fat
2dessert spoons golden syrup
1 teaspoon ground ginger
1 teaspoon bicarbonate of soda (optional)
1 cup sugar
1 cup milk
2 cups flour
1 egg
1. Place butter, lard, syrup and milk into a pan and melt over a low heat.
2. Place dry ingredients into a mixing bowl and make a well in the centre.
3. Pour the melted ingredients into the well.
4. Mix in the beaten egg.
5. Pour into a baking tin of choice.
6. Bake at gas 4 or 180ºC for ½ to ¾ hour.
