Apple and Chilli Jelly

Fills
2 medium sized jars.
700g apples, cored and chopped
2 red chilies, finely chopped
0.9l water
1 red chilli, finely chopped, with the the seeds removed
500g preserving sugar
Juice of half a lemon
Put the apples, 2 chillis and water into a pan and bring to the boil. Simmer until the apples are very soft. Let the juice drain through a muslin or sieve overnight.
Put the apple juice, sugar and lemon into a large pan and bring to the boil. Skim off any scum that builds up.
Cook until the jelly has reached the setting point, about an hour, then add the remaining chilli and cook for a little longer. Cool for 10 minutes, stir and add to jars.
