Poached Pears with Gorgonzola

2 cups red wine
dash of port
orange peel
1/4 cup lemon juice
2/3 cup sugar
cinnamon stick
cloves
bay leaves
black peppercorns
Add poaching ingredients to a pan and heat. Once sugar is dissolved, add peeled pears and let simmer for 15-20 mins until soft. Cool & core the pears.
Reduce red wine to a syrup and spoon over pears, serve with room temperature gorgonzola.
