Crispy Waffle Tower (Waffle Croccante)
50g butter
70g caster sugar
2 egg whites
50g 00 flour (sieved)
Sachet of vanilla powder
50ml un-whipped whipping cream
2 kiwis
2 bananas
2 peaches
1 papaya
1 tbsp caster sugar
1 orange (squeezed)
200ml whipped cream
2 tbsp Cointreau liquor
1. Slice all the fruits, add the 1 tbsp sugar and juice of an orange with the Cointreau and allow to flavour.
2. Whip the cream (250ml) and leave in the fridge.
3. Pre-heat the oven at 200C.
4. Beat the egg white for approx. 30 seconds.
5. In a pan gently soften the butter on a light heat and with a wooden spoon mix in the sugar stirring continuously. Add half of the beaten egg white and then add in the sieved flour. Mix well together and finally at the end add the remaining egg whites, vanilla powder and the un-whipped cream.
6. Place some baking paper on a baking tray and place a table spoon of the mixture onto the sheet approx. 10cm diameter (should get at least 12 discs). Put in the oven and cook for approx. 5 minutes until nice and golden.
7. To prepare the plate, place 1 waffle on the bottom then a spoonful of whipped cream then a couple of tablespoons of fruit salad. Repeat the process three times until you have a tower affect. Dust with Icing sugar and serve immediately.
