Pickled Fennel

From Waitrose
150g Caster Sugar
300ml white wine vinegar
i larfe Fennel bulb (about 175g), finely sliced
Simmer the sugar with the vinegar until dussolved, do not boil. Cool to lukewarm. Pour the sweet-sour vinegar over the fennel and refrigerate over night, or for at least an hour.
