Nigellas Lemony Samon with Cherry Tomato Couscous
Couscous
Add a pinch of salt, 1/2 tsp smoked paprika and 1/2 tsp fresh grated ginger to a cup of couscous. Add boiling water (1cm above the level of the grains), cover with clingfilm and set aside. Mix a small chopped red onion, juice of half a lemon, halved cherry tomatoes, pinch of salt and some garlic oil. Stir into the prepared couscous.
Salmon
Combine lemon zest, garlic oil and smoked paprika. Rub into salmon fillets and fry/grill until cooked through.
Serve salmon with couscous on the side, garnished with coriander.
