Knickerbocker Glory

Old-fashioned Knickerbocker Glory. Some versions include layers of custard, this one doesn't, and for the really authentic touch - use tinned mixed fruit cocktail ;)

One scoop each of Chocolate, Vanilla and Strawberry Ice Cream
3 tbsp Strawberry Syrup
2 tbsp Chocolate Syrup
6 Peach Slices (tinned)
3 Pear Halves (tinned)
3 tablespoons Pineapple Chunks (tinned)
1 tablespoon Cherries (tinned)
1 tablespoon Toasted Almonds
Whipped Cream
Glace Cherry (optional)
Fan shaped ice cream wafers

Place two peach slices and one pear half (cut in to two) in the bottom of a tall glass and add a tablespoon of the strawberry syrup.

Add a scoop of vanilla ice cream and two more peach slices, another pear half, a tablespoon of pineapple chunks and a third of the cherries to the glass. Pour over another tablespoon of the strawberry syrup.

Add strawberry ice cream and more fruit as above. Pour over the final tablespoon of strawberry syrup 

Add chocolate ice cream, the remaining pineapple chunks and cherries (leaving one cherry for garnish). Cover with whipped cream.

For a garnish, drizzle the chocolate sauce over & sprinkle with toasted almonds, place the reserved cherry on the top (or use a glace cherry), and finish off with fan shaped wafers
