Olives with herbes de Provence

450g assorted green, black and purple olives
1 tbsp herbes de Provence -
4 fat, unpeeled garlic cloves, bashed flat with a heavy object
6+ tbsp extra virgin olive oil

Pack the olives into a Kilner jar. Chuck in the herbs, tuck in the garlic and cover with olive oil. Leave to marinate overnight, shaking the jar from time to time.

Serve on buttered bread
