Yucatecan soup sopa de lima (Mexican Lime Soup)
Thomasina Miers, co-owner of Mexican street food chain Wahaca (www.wahaca.co.uk), can’t get enough of zingy Yucatecan soup sopa de lima for a boost. ‘It’s hot, sweet, sour, spicy, fragrant, delicious and makes me feel much better’.

2 chicken legs
1 onion
2 carrots
2 sticks celery
pinch of allspice
pepper
For the sofrito (measurements to taste)
1 tsp oil
1-2 onions (chopped), some
garlic
carrot, two to three
2-3
tomatoes, and one
1
small habanero chilli (chopped)
To finish
3 limes, juiced + zest
2 oranges, juiced + zest
tortilla, cut into strips
coriander, chopped
avocado
Simmer chicken legs with onion, carrots, celery, allspice and pepper in water for 20 minutes.
For the sofito, fry onions in oil with garlic, carrot, tomatoes, and chilli.
When the chicken is cooked, pour the broth into the sofrito, add the lime and orange juices and zest and simmer for another 20 minutes.
Garnish with fried tortilla strips, chopped coriander, avocado and the shredded, cooked chicken from the legs.
