Red Radish and Mirabelle Plum Salad with Dill
This salad is best served in a glass bowl so that its beautiful color combination can be enjoyed along with its taste. From http://www.yumandmore.com/
12 plump radishes
20 Mirabelle plums
1 tbsp Mirin Sweet Seasoning
1 tbsp Sushi/Grain flavored Vinegar
1 tsp salt flakes or sea salt
½ – 1 slice of pickled Sushi ginger finely chopped
1 sprig of fresh dill
Freshly ground pepper
- Wash and clean the radishes removing the tops and bottoms. Finely slice them on the mandolin. Place in a bowl.
- Wash the Mirabelle Plums, remove the stone and cut into eights. Add to the bowl with the radishes.
- Add the salt, the Mirin seasoning and the vinegar. Mix with a spoon and let sit 10 minutes.
- Wash and chop the dill very finely.
- Add chopped dill, freshly ground pepper (3 twists), the chopped ginger and mix.
- Taste and adjust seasoning. Keep cool if not using immediately.
