10 limes, pulp removed
1 small box red jelly
1 cup boiling water (or as instructions)
1 cup cold vodka
Mini chocolate chips, or passionfruit seeds (optional)

Cut the limes in half, then squeeze out the juice, then scrape out the rest of the pulp. Set the empty llime halves empty side up on top of paper towels in muffin molds.

Make up jelly and stir until fully dissolved. Stir in vodka and pour mixture into lime halves. Chill for at least 2 hours. Add seeds (if using) part way through setting.

Cut each lime half in half again, making wedges, to serve

Lemoncello Lemons

7 6.5x11.5cm or 8 7.5x11cm leaves of gelatine
7 medium, or 5 big lemons
135g pack of lemon jelly
350ml hot water
150ml lemoncello
a couple of drops of lemon essence (optional)
1 tbsp caster sugar

Soften gelatine in boiling water. Squeeze out when soft.

Dissolve jelly in water, add gelatine leaves, mix until all dissolved. Finish with lemoncello and sugar.

Chill until set (freezer may be used for 25mins to speed up setting.
