Mushroom and ham baked eggs
2 tbsp oil
4 open cup mushrooms
4 slices, ham
75g cheddar cheese, grated
2 tbsp chopped chives
4 large eggs
Toast to serve
Preheat oven to 220\200 fan\ gas mark 7
Remove stalks from mushrooms, brush them with oil and place in a Yorkshire pudding tin, gill side down. Bake for 5 minutes.
Life the mushrooms out from the tin, brush the tin with oil & line with ham. Add mushroom, gill side up,. Add half the cheese and cives.
Make a hollow and break an egg into it, sprinkle the remaining cheese/chives over.
Loosely cover with foil and bake for 10 mins, or until the eggs are set.
