Home-made Pitta Bread
I`ve used this recipe (from the UK Vegetarian Society website) a couple of times. I was quite pleased with the result, but I was thinking of trying a wholegrain flour next time. Makes 12 pittas
680g / 1-1/2lb white flour
2tsps salt
1 sachet easy-blend dried yeast
450ml / 3/4pt warm water
2tbsp sunflower or vegetable oil
Put the flour and salt into a large bowl. Add the easy-blend dried yeast and mix well. Make a well in the centre and add the water and oil. Using your hands draw together in a rough dough and turn out to a lightly floured surface. Knead for 10 mins until a smooth, elastic dough is formed.
Put into a clean bowl, cover with cling film and leave in a warm place for 1/2 to 1 hour until doubled in size. Turn the dough out, knock back and then divide into 12 balls. Flatten each ball and roll into an oval shape. Place on a greased baking tray. cover with cling film and leave for a further 15 mins. Bake in a hot oven, 220C/425F/Gas Mark 6, for 15-20 mins until puffy and cooked.
