Slow Fried Potatoes

Slice potatoes thinly and mix in a bowl with plenty of oil & herbs of your choice. Slow fry. Serve with a yogurt dressing made with Dijon mustard and herbs.
Beans on Toast with Chilli
Blanch broad beans in boiling water for a few minutes and then slip them from their skins. Fry with some red onions and chilli, add some mint. Serve on fried bread.
