Vanilla Oat Bran Porridge

Serves 2

3 tablespoons of oat bran
125 ml of skim or zero fat milk.
Vanilla essence to taste
Sweetener to taste

1. Place the oat bran and milk in a small microwaveable bowl and heat on high for 45 seconds.
2. Remove from the microwave and add the vanilla essence and sweetener to taste.
3. Allow to stand for a few minutes for the oat bran to soak up the milk
4. Return to the microwave and cook on high for a further 45 seconds.

You may need to adjust the amount of milk used depending on the consistency of porridge that you like and the level of moisture in the oat bran.

Chocolate Oat Bran Cereal

Serves 4

6 tablespoons of oat bran
3 teaspoons of low carb cocoa powder
1 whole egg and 1 egg yolk
Sweetener to taste

1. Place oat bran and cocoa powder in a bowl and mix throughly.
2. Beat eggs in another bowl with the sweetener and then add to the oat bran mixture.
3. Roll the mixture into small balls and place on baking paper on a baking sheet.
4. Press down lightly on the top of each ball with a fork.
5. Place in a preheated oven at 375 degrees F for approximately 15 minutes.
6. Place the cereal on a wire tray to cool.
7. Enjoy with skim or zero fat milk or with zero fat yogurt.

Chocolate Oat Bran Muffins

Baking powder, 11g sachet
Cocoa powder (low fat, unsweetened), 60g (low fat)
Eggs, 2
Liquid sweetener, 150g sugar equivalent
Oat bran, 4 tablespoons
Skimmed milk, one glass
Wheat Bran, 2 tablespoons

1. Mix all the ingredients

2. Oil the muffin tins and wipe the excess off

3. Cook for 25 - 30 minutes at thermostat 6
