Thick courgette soup

6 - 8 servings

4 large courgettes, washed and peeled.
1 large onion.
1 carrot, wash and peeled.
1 turnip, washed.
1 low-fat beef bouillon cube.

Wash, peel and cut the vegetables into large pieces.

Put in a tall pan with the low-fat beef bouillon cube and cover with water.

Cook for 20 - 30 minutes.

Puree using a blender to obtain a thick, smooth soup. Serve hot.
