Daily Mail Lemon Cheesecake

Surprisingly good. More like a souffle version of a cheesecake.

2 eggs, separated
4 tbsp low fat fromage frais
4 tbsp low fat quark
200g low fat cottage cheese
300g low fat cream cheese
2 tbsp cornflour
8 tbsp sweetener
lemon essence, to taste
grated lemon rind (optional garnish)

Heat oven to 160C/325F/Gas 3.

Whisk the egg whites until stiff, then add the cornflour.

In another bowl, mix the remaining ingredients and beat until smooth and thick.

Fold egg white mixture into thesecond bowl.

Bake for 40 mins or until risen and golden brown. Cool, then serve garnished with grated lemon zest
