DUKAN MAYONNAISE

Makes 2 portions, all phases
1 egg yolk
1 tbsp Dijon mustard
Salt and black pepper
1 tbsp chopped parsley or chives
3 tbsp virtually fat-free fromage frais or quark
Put the egg yolk in a mixing bowl and combine with the mustard. Season with salt
and pepper and add herbs.
Gradually mix in the fromage frais or quark, stirring continuously. Keep
chilled.
